Aldi-licious: Taco Soup

This winter has been so mild in much of the country that it seems as if we are almost stepping into spring. Nevertheless, it is still great soup weather and this recipe is just about one of the easiest ever! Throw everything into a big soup pot, let it simmer for whatever amount of time you have and then dress it up with some yummy toppings and you have a meal just about everyone gets excited about.

Taco Soup

2 pounds ground beef
1 Tbsp. canola oil
2 onions, chopped
1 can (15 ounces) black beans
1 can (15 ounces) whole kernel corn, drained
2 cans (15 ounces each) diced tomatoes, undrained
1 pkg. taco seasoning mix
about 4 cups of water

Optional toppings:
tortilla chips
sour cream
chopped avocado
shredded cheese
salsa
chopped tomatoes
green onions

Brown the beef and onions in a large soup pot using the oil if needed. Add all of the remaining ingredients and bring to a boil. If you need to, serve immediately. Otherwise, allow to simmer for around an hour. Serve in soup bowls with optional toppings on the side.

Serves 8.
