Aldi-licious: Crock Pot Chicken Fajitas

Crock Pot Chicken FajitasMost of us are always looking for another easy and delicious crockpot recipe to add to our repertoire. Aldi makes this dinner easy, delicious, and affordable. With Cinco de Mayo coming up on May 5th, this recipe is perfect for trying out in the next few weeks. Recipe adapted from yellow onion, sliced
3 sweet peppers, sliced
1 1/2 pounds boneless chicken breasts
1/2 cup chicken stock (or water)
1/2 tsp. salt
2 Tbsp. cumin
1 1/2 Tbsp. chili powder
squirt of lime juiceto serve (choose whatever ingredients your family likes):
soft or hard tacos or corn tortillas
shredded cheese
sour cream
shredded lettuce
black olives, slicedPlace sliced onions and peppers in the bottom of a greased crockpot. Lay chicken on top of veggies. Pour chicken broth (or water) over top. Sprinkle with cumin, salt and chili powder. Give a nice squirt of lime juice over the top. Cover and cook on low for 8 hours. Shred meat with two forks and stir back into juices. Serve meat mixture with a slotted spoon onto tortillas of your choice. Put on any toppings you desire.Serves 4-6.See more recipes in the Aldi-licious series here.
