Aldi-licious: Strawberry Cake

Aldi has been having some great sales on strawberries recently! In fact, I’ve walked away with 48 pounds at a time to freeze for smoothies throughout the year. And I know they’ll be having their blueberries on sale sometime in July and I bet you could try this cake with blueberries too. This little tea cake is perfect for Sunday afternoon — it’s easy, colorful, and who doesn’t love freshly whipped cream?!

Strawberry Cake

Serves 8
Preheat oven to 350 degrees

 

1/2 cup sugar
½ cup butter (soft)
1 cup all-purpose flour (you can easily substitute a gluten-free flour blend if you need to!)
1 teaspoon baking powder
Pinch of salt
2 eggs
1 teaspoon vanilla
8 ounces strawberries sliced in half
freshly whipped heavy cream with 2 Tbsp. of confectioner’s sugar added while whipping

 

Grease a 9-inch round cake pan and line base with parchment paper, or dust with flour. Cream sugar and butter. Add flour, baking powder, salt, eggs and vanilla. Beat well. Using a spatula, scrape the cake batter into prepared pan. Arrange the strawberries (seeds up) in a circular fashion around the pan.

 

Bake for 1 hour or until a toothpick inserted into the middle comes out clean (except for strawberry juice). Remove from oven and serve lukewarm. Serve with whipped cream and extra strawberry slices.
