A Gluten-Free Tea Party + Recipe

Many thanks to my sister, Amy, for the recipe and pictures of a gluten-free tea party she gave earlier this month.

 

 

 

 

Recipe:

Can-Orange Pistachio Scones

2 1/2 cups plus 1 tbl all-purpose gluten-free flour

1 teaspoon gluten-free baking powder

1 teaslpoon baking soda

1 teaspoon xanthan gum

1/4 tsp salt

1 cup butter (or earth balance) chilled

1 egg, beaten

1 cup coconut palm sugar

1/4 cup agave

3 droppers liquid stevia (valencia orange)

2 droppers liquid stevia (vanilla creme) (could use three or four vanilla like we did)

1 teaspoon orange zest

1/4 cup pistachios, chopped

1/2 cup unsweetened dried cranberries (or raisins)

1 egg white (beaten)

 

Pre heat oven to 400 degrees. Line baking sheet with prachment paper, set aside.

In large mixing bowl, sift together 2 1/2 cups gluten-free flour, baking powder, baking soda, santhan gum, and salt. Cut butter into small pieces. Cut butter pieces into flour mixture with pastry cutter or fork until flour resembles little balls the size of peas.

Using a mixer, mix together the beaten egg, Swerve (or palm sugar), agave, and liquid stevia. Mix in orange zest. Add dry ingredients to wet ingredients and mix. Be careful to not overwork the dough.

On medium heat in nonstick sauté pan, toast pistachios until oils are released, about 8 mins. Cool nuts. Dredge cranberries in the extra tablespoon of gluten-free flour. Fold nuts and dredged cranberries (or raisin) into dough until just combined.

Turn dough onto prepared baking sheet. Spray-oil hands and pat dough into an 8-inch circle. With spray-oiled knife, cut dough into 8 wedges (do not separate wedges). Brush dough with egg white. Sprinkle dough with extra Swerve (or other). Bake for 13-15 minutes or until golden. Cool on wire rack.
